1 c. unsalted butter, softened
1 c. brown sugar
1 c. white sugar
2 tsp. vanilla
2+ cups flour
1 tsp. soda
1/2 tsp. baking soda
3/4 tsp. Kosher salt
1+ cup oatmeal
1 small package semi-sweet chocolate chips
1 small package butterscotch chips
Preheat the oven to 350 degrees.
Cream the butter, brown sugar and white sugar together in a mixing bowl. Add the eggs and vanilla and mix until light and fluffy.
Mix together the flour, baking soda, baking powder and salt in a separate mixing bowl. Slowly add the flour mixture to the egg and sugar mixture. Mix well.
Add the oatmeal and chocolate and butterscotch chips.
Using a cookie scoop, drop cookie dough onto a parchment paper-covered cookie sheet. Add a twist of sea salt, if you wish.
Bake at 350 for 8-10 minutes. Cool on cookie racks.
